A decadent twist on the classic French toast, filled with a luscious cream cheese and strawberry filling, crisped to golden perfection, and topped with fresh berries and syrup.
Ingredients
For the Filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped fresh strawberries (plus more for topping)
For the French Toast:
- 8 slices of thick-cut bread (brioche, challah, or Texas toast)
- 3 large eggs
- 3/4 cup milk (whole or 2%)
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
- Butter, for frying
Toppings (Optional):
- Maple syrup or strawberry syrup
- Powdered sugar, for dusting
- Whipped cream
- Fresh strawberries or other berries
Instructions
1. Make the Cheesecake Filling
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy. Gently fold in the chopped strawberries.
2. Assemble the Sandwiches
Spread a generous spoonful of the cream cheese mixture on 4 slices of bread. Top with the remaining 4 slices to create sandwiches.
3. Prepare the Egg Mixture
In a shallow bowl or baking dish, whisk together eggs, milk, sugar, cinnamon, vanilla, and a pinch of salt until fully combined.
4. Dip and Soak
Dip each sandwich in the egg mixture, allowing it to soak for about 10–15 seconds per side. Avoid oversaturating the bread.
5. Cook the French Toast
Heat a large skillet or griddle over medium heat and add a bit of butter. Cook the stuffed French toast sandwiches for 3–4 minutes per side, or until golden brown and cooked through.
6. Serve
Cut sandwiches in half and serve with a dusting of powdered sugar, a drizzle of syrup, and fresh berries or whipped cream, if desired.

- Use low-fat cream cheese and skim milk for a lighter version.
- Replace strawberries with other fruits like blueberries or raspberries.
- Add a touch of lemon zest to the filling for brightness.
