Sticky Rice with Lạp Xưởng, Dried Shrimp, and Shiitake Mushrooms.

Ingredients:

  • 2 cups glutinous rice (sticky rice)
  • 2 links of lạp xưởng (Chinese sausage), sliced thinly
  • 1/4 cup dried shrimp, soaked in warm water for 20 minutes and drained
  • 4 dried shiitake mushrooms, soaked in warm water for 30 minutes, then sliced thinly
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce (for color)
  • 1 tsp sugar
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 green onion, chopped (for garnish)
  • 1 tbsp sesame oil (optional, for extra fragrance)

Instructions:

  1. Prepare the sticky rice:
    • Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 2–4 hours or overnight for best results.
    • Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth or parchment paper for about 30 minutes, until the rice is fully cooked and sticky.
  2. Cook the sausage, shrimp, and mushrooms:
    • Heat 2 tablespoons of vegetable oil in a pan over medium heat. Add the lạp xưởng (Chinese sausage) and cook until browned and crispy. Remove from the pan and set aside.
    • In the same pan, sauté the minced garlic until fragrant. Add the soaked and drained dried shrimp and sliced shiitake mushrooms. Stir-fry for 2–3 minutes.
  3. Combine the rice and toppings:
    • Add the steamed sticky rice to the pan with the shrimp and mushrooms. Stir gently to combine. Add the soy sauce, oyster sauce, dark soy sauce, and sugar, stirring until the rice is evenly coated with the sauces.
    • Toss the cooked sausage back into the pan and mix well. Drizzle with sesame oil for added fragrance, if using.
  4. Serve:
    • Transfer the sticky rice mixture to a serving platter and garnish with chopped green onions.
    • Serve hot with a side of fresh cucumbers or a light salad for contrast.

Tips:

  • If you want extra flavor, add a splash of the soaking liquid from the dried shrimp or shiitake mushrooms when stir-frying.
  • You can also add some fried shallots on top for a crunchy finish.
