Ingredients:
- 6 oz (170g) semi-sweet or dark chocolate (chopped)
- 3 tbsp unsalted butter
- 3 large eggs, separated
- ¼ cup granulated sugar
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
1. Melt the chocolate:
- In a heatproof bowl, combine the chopped chocolate and butter. Place the bowl over a pot of simmering water (double boiler method), ensuring the bottom of the bowl doesn’t touch the water.
- Stir occasionally until the chocolate and butter are completely melted and smooth.
- Remove from heat and set aside to cool slightly.
2. Whisk the egg yolks:
- In a medium bowl, whisk the egg yolks and 2 tablespoons of sugar until the mixture is thick and pale in color.
- Slowly add the melted chocolate into the egg yolk mixture, whisking constantly to combine. Set aside.
3. Beat the egg whites:
- In a separate clean bowl, beat the egg whites with a pinch of salt until soft peaks form.
- Gradually add the remaining 2 tablespoons of sugar, beating until stiff, glossy peaks form.
4. Whip the cream:
- In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Be careful not to overwhip the cream.
5. Fold everything together:
- Gently fold the whipped cream into the chocolate mixture until mostly combined.
- Next, gently fold in the beaten egg whites, a third at a time, being careful not to deflate the mixture. Fold until everything is smooth and fully combined.
6. Chill and serve:
- Spoon the mousse into individual serving dishes or glasses.
- Refrigerate for at least 2 hours (or overnight) to set.
