Ingredients:
1 lb chicken breast (diced)
1/2 lb shrimp (peeled and deveined)
1/2 lb smoked sausage (sliced)
1 onion (chopped)
1 green bell pepper (chopped)
2 celery stalks (chopped)
3 garlic cloves (minced)
1 can diced tomatoes (14 oz)
2 cups chicken broth
1 1/2 cups long-grain rice
2 tbsp olive oil
1 tsp paprika
1 tsp thyme
1 tsp cayenne pepper
Salt and pepper (to taste)
Fresh parsley (for garnish)
Instructions:
1️⃣ Sauté chicken and sausage in olive oil until browned.
2️⃣ Add onions, bell pepper, celery, and garlic, cooking until softened.
3️⃣ Stir in tomatoes, chicken broth, rice, paprika, thyme, cayenne, salt, and pepper.
4️⃣ Cover and simmer for 20 minutes, then add shrimp and cook until pink.
5️⃣ Garnish with parsley and serve hot.
Notes:
Adjust the spice level by adding more or less cayenne pepper.
Swap shrimp with scallops or omit for a meat-only version.
